This just may be the Most Deliciousness You Can Get In One Pan….
Okay so maybe not as delicious as a pan on Wonder bars but really good for a non-chocolate food.
It’s a recipe from my upcoming 21-Day ShredHiit Challenge (this is an online challenge so it doesn’t matter where you live).
It’s SUPER quick. Hands on time is less than 10 minutes. And I really mean 10 minutes. Not how some recipes say 10 minutes but they don’t include all the time you spend cleaning, dicing and prepping the ingredients. This is a true less than 10 minutes flat hands-on time.
Plus it’s one dish to cook and one dish to mix so minimal dishes.
Plus, plus as I mentioned, it’s DELICIOUS!

Here is the recipe:
One Pan Artichoke Chicken
Ingredients
1lb Chicken Thighs, boneless and skinless (I use a tad more than 1lb)
1 14oz Can quartered artichokes (not marinated. Just cut up)
1 14oz can pitted black olives
2 cups grape tomatoes
(1) red onion sliced (optional)
Sea salt and pepper to taste
Minced garlic to taste
2 Tbsp Oregano
Directions:
- Put chicken, artichokes WITH juice, olives DRAINED, tomatoes and onion in a bowl. Sprinkle with salt, pepper and add garlic. Mix well and if you have time, let it marinate for about 30 minutes (If you don’t have time, keep it moving).
- Turn oven on to broil.
- Spray a baking sheet with cooking spray and spread ingredients on sheet without the artichoke liquid. Sprinkle with oregano and place in oven for 25-30 minutes until the chicken is cooked through.
- Serve over quinoa, rice or alone.
This dish stores, freezes and reheats well so it’s perfect for meal prep.
